An ‘Instagram famous’ baker’s simple recipe for cookie dough brownies has been hailed ‘beyond delicious’ on social media.

In a recent video posted to her viral food page, FitWaffle Kitchen, Eloise Head showed fans how to make the treats with basic ingredients such as butter, sugar, eggs, flour and cocoa powder. 

‘When you can’t decide between cookies or brownies, you gotta make these,’ the self-taught London chef wrote in the caption.

She added: ‘They’re fudgy and gooey, packed with cookie dough and lots of chocolate chips.’

Ms Head said she starts by adding 170 grams of melted butter and 250 grams of caster sugar to a bowl, then cracking in two large eggs and whisking until the mixture is light and fluffy.

Next, she said she adds in 125 grams of melted chocolate and mixes until the texture becomes smooth.

She said she sifts in 100 grams of plain flour and 30 grams of cocoa powder along with a teaspoon of salt, then folds the dry ingredients into the chocolate batter until fully combined.

Ms Head said she adds in 80 grams of chocolate chips, stirs them in, then turns her attention to the cookie dough.

‘You can either use shop bought cookie dough or make your own – this one is so simple you can’t really go wrong,’ she said.

Ms Head said she mixes 100 grams of softened butter with 125 grams of light brown sugar, creaming them together before adding one egg yolk and half a teaspoon of vanilla essence.

Next, she said she adds 110 grams of plain flour and half a teaspoon of baking powder, mixing gently until the mixture forms into a dough.

She adds 75 grams of milk chocolate chips but said you can use any kind you wish – white, dark or milk.

Finally Ms Head said she pours the brownie batter into a lined baking tray, spoons balls of cookie dough on top then bakes the mixture at 170 degrees Celsius for 30 minutes.

Her recipe, which has amassed 46,061 ‘likes’ since it was uploaded on May 24, drew widespread praise online.

‘These look beyond delicious,’ one woman replied. 

Others tagged their friends, saying they should get together and make the brownies next weekend.

Ingredients

For the brownie

170g unsalted butter, melted

250g caster sugar

2 large eggs

125g dark chocolate, melted and cooled slightly

100g plain flour

30g cocoa powder

1 tsp salt

80g chocolate chips

For the cookie dough

100g unsalted butter, softened

125g light brown sugar

1 egg yolk

1 tsp vanilla

110g plain flour

1/2 tsp baking powder

75g chocolate chips + extra chocolate chips for the topping

Method

1. Add 170 grams of melted butter and 250 grams of caster sugar to a bowl, then crack in two large eggs and whisk until the mixture is light and fluffy.

2. Add in 125 grams of melted chocolate and mix until the texture becomes smooth.

3. Sift in 100 grams of plain flour and 30 grams of cocoa powder along with a teaspoon of salt, then fold the dry ingredients into the chocolate batter until fully combined.

4. Add in 80 grams of chocolate chips and stir, then set mixture aside.

5. To make cookie dough, mix 100 grams of softened butter with 125 grams of light brown sugar, then cream them together before adding one egg yolk and half a teaspoon of vanilla essence.

6. Add 110 grams of plain flour and half a teaspoon of baking powder then mix until the mixture forms into a dough.

7. Add 75 grams of chocolate chips – milk, white or dark. 

8. Pour brownie batter into a lined baking tray, spoon balls of cookie dough on top then bake the mixture at 170 degrees Celsius for 30 minutes.
