Tiktok’s tastiest hits: Blended baked oats

THE IDEA

Put the ingredients of a classic baked oat recipe in a blender, whiz until smooth, then bake. According to TikTokers the result is light and airy, almost like eating cake for breakfast.

THE VERDICT: 3/5

It took a few attempts to achieve anything close to being ‘light and airy’. Overblending the oats ended up with a slightly gluey consistency, so we found it better to whiz the oats separately then combine with the wet ingredients just before baking. This version is not as simple as the TikTok original, but we would happily eat it for breakfast.

SERVES 2

PREPARE 10 minutes

COOK 25 minutes

  • sunflower or vegetable oil, for greasing
  • 100g porridge oats
  • 1 tsp baking powder
  • 1 medium ripe banana (about 80g)
  • 100ml whole milk (or any non-dairy milk)
  • 1 large egg
  • 2-3 tbsp maple syrup
  • ½ tsp ground cinnamon
  • 75g blueberries

 

STEP 1 

Preheat the oven to 180C/160C fan/gas 4. Lightly oil a small baking dish (or use two individual ramekins). Place the oats and the baking powder in a high-speed blender (such as a Nutribullet) and whiz briefly until the oats are ground. Tip into a bowl and set aside.

 

STEP 2 

Add the banana, milk, egg, maple syrup, cinnamon and a pinch of salt to the blender and whiz until smooth. Stir the ground oats and baking powder into the wet ingredients then pour into the baking dish. 

 

STEP 3 

Scatter over the blueberries and bake for 25 minutes (or 20 minutes if using individual ramekins). To see if it is ready, test by inserting a skewer at the centre; it should come out clean. Allow to cool for a few minutes before serving.

 

TIP

This is a pretty versatile recipe. You can double to serve more, bake it in muffin cases for breakfast on the go, or swap the cinnamon for 1 tbsp cocoa powder and the berries for chocolate chips for a more indulgent version.
