A talented baker has shared his shared his recipe to make the ultimate loaded brownies with a chocolate chip cookie base at home.

Morgan Hipworth, from Melbourne, shared a video on TikTok and Instagram revealing exactly how he made the delectable dessert.

‘Look it’s no secret I love brownies but my ultimate loaded brownies take this love to another level,’ he wrote online.

While the method is simple, the recipe requires a number of specific ingredients as the cookie base was made from scratch.

Morgan began by pushing the pre-made cookie dough into the base of a lined glass baking tray to create an even base layer

While the base was setting, Morgan started making the brownie batter by whisked eggs in a bowl then added unsalted butter, cocoa powder, caster sugar and plain flour then stirred to combine.

He then added 175g of chocolate chips, stirred through then added the batter on top of the Oreos and Biscoff spread and made sure the layer was even.

The brownie was baked in the oven at 180 degrees Celius for 50 minutes before being served.

How to make Morgan Hipworth’s ultimate loaded brownies

For the base: 

  • 115 grams unsalted butter, softened
  • 80 grams brown sugar
  • 55 grams caster sugar
  • 1 egg
  • 190 grams plain flour
  • 1/2 tablespoon cornflour
  • 1/2 teaspoon bi-carb soda
  • 175 grams chocolate chips

For the brownie:

  • 2 eggs, beaten
  • 120 grams unsalted butter, melted
  • 30 grams cocoa powder
  • 1 cup (220 grams) caster sugar
  • 1/2 cup (75 grams) plain flour
  • 50 grams chocolate chips

To assemble:

  • 12 oreos 
  • 1/4 cup Biscoff cookie butter, melted  

Method: 

To make the chocolate chip cookie base:

Grease a line a deep baking dish.

In the bowl of a stand mixer fitted with a paddle attachment, combine the butter, brown sugar and caster sugar, and mix for 2 minutes or until the mixture is light and fluffy.

Add the eggs, and mix on high speed until the mixture is light and fluffy. Add the plain flour, cornflour and bi-carb soda, and mix on the lowest speed until all the flour is just incorporated.

Add the chocolate chips, and mix on the lowest speed until the chocolate chips are evenly incorporated into the dough.

Push the cookie dough into the base of the tin and top with the Oreos and top with the melted cookie butter. Place in the freezer for at least 20 minutes to set.

To make the brownies:

Preheat the oven to 140 degrees Celsius 

In a large mixing bowl add the brownie ingredients except for the chocolate chips, and mix with a wooden spoon until everything is just combined. Add the chocolate chips and stir to combine.

Add the brownie batter on top of the Oreo layer and bake in the preheated oven for roughly 50 minutes or until the brownie is JUST wobbly in the centre.

Allow to cool fully before serving
